With the past year that we have had, this Mother’s Day is even more special than usual. We may not be able to spend time “in person” with our Grandmas, Moms, Aunts, and Mom-in-laws, but that doesn’t mean we can’t show how much we care. Give a call, a drive by visit or even bring over dinner. You would definitely be in her good graces if you showed up with a hot plate of her favourite Perfect Pierogies or Periske or Cabbage Rolls – or even all three! No matter what you do, do it from the heart.

We have a new recipe in this newsletter – Perfect Pierogies Nachos. This dish is an unusual, yet brilliant Ukrainian-Mexican fusion! You may never go back to tortilla chips again!

A cabbage roll is a dish consisting of steamed cabbage leaves wrapped around a variety of fillings. The inspiration for our recipe started from our grandmothers coming from the Ukraine and Poland. The best rolls are prepared from locally grown cabbage at a particular time of the year. The filling is predominantly rice with prepared bacon, onion and a special blend of spices. The filling is rolled in the cabbage leaf, then baked with a homemade tomato sauce and butter.

Perishke are small buns made with a yeast dough and a variety of fillings. One of our favourite fillings is sauerkraut cooked with bacon, onion and a variety of spices. Once filled, these little buns are whisked with egg, baked, and then brushed with butter. They are best served with chopped fried bacon and finely chopped green onion. These are served as a side dish or as an appetizer.

  • 2 packages Perfect Pierogies – Potato & Cheddar
  • 2 tbsp. butter
  • 1/2 cup salsa
  • 1 cup Shredded Tex Mex or Nacho flavoured cheese
  • 1/3 cup sour cream
  • 3 green onions – sliced
  • 6 slices cooked bacon – chopped


  1. Heat oven to 400ºF.
  2. Cook pierogies in large saucepan as directed on package, omitting salt; drain. Return pierogies to pan.
  3. Add butter; toss until butter is completely melted and pierogies are evenly coated with butter.
  4. Spread onto foil-covered rimmed baking sheet sprayed with cooking spray.
  5. Bake 10 min. Top with salsa and cheese; bake 5 min. or until cheese is melted.
  6. Top with remaining ingredients and serve immediately.

Note: Add your own twist to this recipe by adding chopped peppers, jalapeños or even ground beef before putting in the oven!
